The Story

The Beaufort family own 7.8ha vines and cellars in Ambonnay GC to the North, and Polisy in the South. Their father Jacques realised that the pesticide path was not for him in 1969, around the time that he met his wife. He developed an in-house recipe book, specialising in tisanes and essential oils. They later became certified organic.

Jacques is one of Zubair’s favourite wine-thinkers, period. Seeing the world as it is. The Champagnes are wine-y and expressive. An Ambonnay parcel abuts Krug’s Clos D’Ambonnay – it’s what you think about when you are in the vines.

Now largely run by siblings Constant & Réol, the offering has expanded to include a sparkling white and rosé made from pinot noir harvested early in Languedoc and vinified in Champagne, and a Bourgogne rouge produced by Réol’s wife Elodie, just inside the regional border.
