Defining practices: Low Sulphur input to the vineyard and wine making process, in order to allow full expression of the yeasts in the winemaking process.

The use of innovative vine pruning techniques in order to combine both old and new wood. (a combination of cane and spur, cordon and cane). low vine planting density varying from 2000 to 2666 vines per hectare, to encourage better air flow around the vines and reduce the reliance on fungicides. This minimizes shading to give maximum sunlight exposure to the fruiting zone.
